P87 or self assessment? : personalfinance

Hi, this might be a bit length so I apologise.

I am in serious need of some advice:
Background: currently working as a doctor in a training programme (so my employer is a trust that is out of region I work in), I am also on the staff bank of two hospitals at which I occasionally do some shifts so technically have three employers.
My tax codes on each payslip changes and to be honest, don’t pay that much attention to because I assume HMRC will correct this however I received a letter for the tax year 22-23 saying I owe them >5k. I worked through all of my payslips, calculated total earnings and total PAYE already deducted and found that I had paid more tax than I should have.
I had a lengthy discussion with HMRC and they advised send the evidence so I sent a copy of my spreadsheet with calculations and each payslip.
They have now sent me another bill for 23-24 and again, I have called them to inform them I believe this to be wrong and will send them the evidence for this.
HMRC said they had not yet had the opportunity to look through the evidence I had sent last year.
Questions:
1. Am I calculating this wrong? Should tax be on total income or is it a flat rate for each additional employer?
2. Should I complete a self assessment to speed things up as I also need to submit tax relief claim for professional expenses? Or stick to the written evidence (payslips and my calculations) and separate P87 form?
3. Anyone got a better way to do this?
